Bei der Nachzucht wird die muttergebundene Kälberaufzucht praktiziert, bei der das Kalb seine tägliche Milchration noch direkt aus dem Euter seiner eigenen Mutter trinkt. Alle Kühe auf Schloss Tonndorf behalten ihre Hörner. Der Stall ist entsprechend groß gebaut. Die Tiere werden hauptsächlich mit eigenem Gras und Heu gefüttert. Das magere Heu von den Naturschutzflächen wird mit nährstoffreicherem Kleegras von den Ackerflächen ergänzt. Die Kühe beweiden die Agrar-Flächen. Sie pflegen und erhalten damit unter anderem die artenreichen Streuobstwiesen. Auf den Ackerflächen werden Kleegras, Getreide und Kartoffeln nach den Richtlinien des ökologischen Landbaus angebaut. Die Ackerränder haben natürlich breite Blühstreifen. Wiesen, Weiden und Ackerland werden, außer mit Traktoren, auch mit Pferden bearbeitet. Dadurch wird empfindlicher Acker- oder auch Waldboden nicht durch schwere Maschinen belastet. Die Milch dieser Kühe ist eine Besonderheit: sie ist reich an Fett und Eiweiß und enthält durch Weidegang und Heufütterung viele wertvolle Inhaltstoffe. Ziel der Milchverarbeitung auf Schloss Tonndorf ist, die besondere Milchqualität so naturbelassen wie möglich zu erhalten. Deshalb wird die Milch nicht homogenisiert. Durch diesen Verzicht auf Homogenisierung verbleibt das Milchfett in seinem natürlichen Zustand und setzt sich in Form von Sahne oben auf der Milch ab. Auch der handwerklich hergestellte stichfeste Joghurt wird von einer feinen Sahneschicht gekrönt. Um die Haltbarkeit der Milch zu verlängern, wird sie pasteurisiert. Während H-Milch auf über 100 °C erhitzt wird, wird die Schlossmilch für eine halbe Stunde auf 62°-64° Grad erhitzt. Dadurch bleibt der Geschmack viel besser erhalten.
